How it works
Se + congiuntivo trapassato (avessero detto) with the condizionale passato (avrei creduto) imagines a different past.
Good to know
Mix them when the time frames differ: a past condition with a present result (se non mi avesse aiutata, ora sarei in Galizia) or a present condition with a past result (se fossi più coraggioso, l'avresti aperta anni fa).

Se non fosse per… means "if it weren't for…".
